Shiitake Mushrooms

Shiitakes can be eaten raw, but are most popular in cooked Asian dishes. The soft, spongy texture and rich, woodsy flavour adds complexity to soups, sauces and stir-frys.

How to purchase

Look for a large, fleshy umbrella-shaped cap, light coloured gills, and open veils. Shiitakes range from light to dark brown in colour.
